Made in the traditional way, Tabarrini’s Montefalco Sagrantino Passito is a decadent dessert wine built from the region’s famed varietal. The Sagrantino grapes are left to dry on straw mats for three months before fermentation, concentrating the flavors and sugars to produce a bold and fragrant style of sweet wine.

Vineyard

The grapes for the Passito are sourced from the South-South East facing hills around the Tabarrini property. The soils are a mix of sand, clay, and river pebbles.

Winemaking

After harvest the grapes rest on straw mats for three months to dehydrate and concentrate the sugars. For fermentation, the wine rests on its skins for a month before resting in French oak barrels for 36 months. The wine then sits in bottle for 18 months before release.

Tasting Note

The ruby red complexion of the glass shows brilliant currant and honey notes on the palate, with softened tannins providing a welcome contrast to the concentrated sweetness of the wine.
