Set firmly in the American style of gin, Bimini Gin uses a neutral base spirit made from non-GMO American corn and is distilled four times for exceptional purity of flavor. The botanicals are separated into groups during distillation, with each group being milled, macerated, and distilled separately. Vapor temperature is closely controlled to maximize the herbal notes and creamy textures imparted by the distillates and the river from the Saco River. The slow distillation process preserves the natural flavors and oils that give the spirit it’s depth and unique texture.

Site

Situated on the Saco River in Biddeford, Maine, Round Turn Distilling takes advantage of an existing idea: local water. The 150 year old textile mill they call home once relied upon the raw power of the river to spin it’s looms. Now, Round Turn sources the water from the river for their gin and uses steam to power their specially made steel and copper still. Made by Tridet Stills of Etna, Maine, the pot-still is a blend of tradition and modern innovation. Packed column blending is used along with a dephlegmator, a device designed to allow for partial condensation that allows for better control of vapor temperature to better maintain the mouthfeel and texture of the gin.

Noted botanicals are juniper, grapefruit peel, Mt. Hood Hops, barley malt, coriander, chamomile, orris root.

Tasting Note

Opens with an aroma of grapefruit and gentle floral notes, supported by malt, coriander, and the barest hint of baking spices. The rich texture emphasizes these background notes, bringing pepper, chamomile, and hops forward to linger while drinking. It is juniper forward without the resin quality found in some London Dry, and is reminiscent of an American session IPA in the finish.
