How to pair Wine and Cheese Like an Expert

Food & Wine contributor Jonathan Cristaldi highlights Champagne Bollinger Special Cuvée as one of the ideal wines to pair with cheese. He explains, “Champagne is cheese’s best friend—capable of eliciting a mouthful of magic with just about any cheese in the world. The bubbles dance on the tongue, and as Werlin says, “scrub away” the cheese on your palate in cleansing fashion, making way for another bite of cheese.” He wittily describes the pairing with Berthaut Époisses cheese. After briefly offering background on the cheese, he explains “This Bollinger delivers lip-smacking granny smith apple, poached pears, stony minerality, and a subtle earthy, mushroom note, all with bracing acidity. Paired with Époisses, it’s like who’s who? Am I tasting the cheese or the Champagne? So good.” Read the full story and more of his explanation HERE

Bollinger is one of the rare Grande Marques that’s still family owned. Known for its rich, elegant and polished style of Champagne, their outstanding wines are the result of rigorous attention to detail and incredibly labor-intensive practices that few houses are willing to undertake. Underscoring its excellence, Bollinger has remained British secret agent James Bond's Champagne of choice since 1973.
